Vong Village Young Green Rice & Hang Than Sweet Rice Cakes
Com Lang Vong (Vong Village Young Green Rice Flakes) is celebrated as the poetic essence of Hanoi's autumn, immortalized by celebrated author Thach Lam as "the unique gift of the land, an offering of boundless green paddies, carrying in its subtle flavor all the simplicity and pure soul of the countryside". Born centuries ago when villagers rescued young unripened rice ears during floods, the art of crafting com has become the most cherished autumn delicacy in Vietnam. Authentic com requires harvested grains of native yellow-flowered glutinous rice (nep cai hoa vang) precisely when the kernels are bursting with sweet milky sap. The production is a masterclass in artisanal sensitivity: separating empty husks, gently roasting the kernels in heavy cast-iron cauldrons over controlled straw flames, and hand-pounding them through seven rigorous cycles in stone mortars to achieve paper-thin, tender green flakes displaying a natural jade hue. Fresh com is wrapped in two protective leaves: an inner elephant-ear leaf to lock in moisture, and an outer West Lake lotus leaf tied with a golden rice straw ribbon to impart its signature floral fragrance. Eaten by pinching small clusters paired with ripe speckled bananas, or enjoyed as Banh Com (sweet green rice cakes filled with silky coconut-mung bean paste from historic Hang Than Street), it represents an unforgettable taste of northern nostalgia.
